Pancake Day!

9 Feb

With Pancake day (Shrove Tuesday) upon us I thought I’d include an easy recipe for you all to use. You can’t beat making your own, it’s so cheap! The kits in shops seem cheap, but ultimately flour eggs and water will always work out better value.

Easy Recipe

100g plain flour
2 large egg
300ml milk
1 tbsp sunflower or vegetable oil, plus a little extra for frying
lemon wedges, to serve (optional)
caster sugar, to serve (optional)

1) Put flour, eggs, milk and salt into a bowl, then whisk into a smooth batter.
2) Set a frying pan to medium heat and spray with 1 cal spray.
3) When hot, cook your pancakes for 1 min on each side until golden, keeping them warm in a low oven as you go.
4) Serve with lemon wedges and sugar, or your favourite filling. Once cold, you can layer the pancakes between baking parchment, then wrap in cling film and freeze for up to 2 months.

Pancake Day Tomorrow!

16 Feb

Tomorrow is pancake day, and whether you are religious or not it is the perfect excuse for a delicious treat.

Domestic Goddess

For the domestic goddesses among you, try a simple home-made recipe – impress with your flipping skills and serve as you please:

100g plain flour
2 large eggs
300ml milk
1 tbsp sunflower or vegetable oil, plus a little extra for frying

1) Whisk all of the ingredients together in a bowl, no matter which order
2) pour a small amount into the pan tilting the pan in each direction to allow the mix to spread out thinly
3) Cook until lightly golden, flipping to cook on the other side
4) Serve with lemon and sugar

Can’t Cook / Won’t Cook

For those who have neither the time nor inclination to cook, try abra-ca-debora.co.uk ready-made pancakes. They taste just like home-made pancakes and are not artificial at all as some ready-made products can be. I sampled the ‘Diddy’ pancakes and used with my chocolate fountain, and the ‘Original’ which I covered in cream cheese and rocket salad, stuffed with smoked salmon and wrapped into a roll. very yummy!
Abra-ca-Debora Pancakes can be found in the chiller at Tesco, Morrisons, Sainsbury’s and Waitrose, price from £1.50. The range consists of Sweet, Original and new Diddy’s.

Verdict: A time-saving 8 / 10
